so, even though i do enjoy eating an entire pizza to myself on occasion, usually im a pretty healthy person. i love keeping fresh fruit around the house but i just despise when it spoils. especially bananas.i love bananas when they just start to get a few spots on them so theyre sweet & soft. but any past that they’re mushy and gross. so what do you do when life gives you over-ripened bananas? you make banana bread! my boyfriend and his friends all love my cinnamon swirl banana bread! i got the recipe off of pinterest {here}! i hope y’all love it as much as we do!

for the bread:

3 over-ripe bananas, smashed up

.33 cups melted butter

.75 cups sugar

1 egg, beaten

1 tsp vanilla

1 tsp baking soda

dash of salt

1.5 cups flour

for the swirl:

.33 cups sugar

1 tbs cinnamon

how to prepare!

1.  preheat oven to 350. then, butter and four a loaf pan. {mine was 9 by 5, but you can use any size, just keep an eye on it!}

2.  mix bananas, butter, sugar, egg, and vanilla together. sprinkle baking soda and salt around on top of the banana mixture. then gently stir in flour. Make sure you don’t overmix!

3.  in a small dish, mix together the .33 cup sugar and 1 tbs cinnamon.

4.  add half of the batter to the loaf pan and then sprinkle half of the cinnamon-sugar mixture all over the batter in the pan{i concentrate mine right down the middle for some crunch!} add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.

5.  bake for 50-60 minutes!

6.  enjoy your delicious banana bread warm or cold! just wrap in plastic wrap to keep it nice & moist!
