lemonade cookies

there is nothing i love more in the world then cookies. big, small, chocolate chip or sugar… i love them all! but, during the summer, im usually not to excited to get inside & eat a warm cookie {its around 85-90 degrees here with 100% humidity… yikes!} so, i thought to myself, “i need something refreshing and sweet!” since its almost summer, and summer means lemonade, why not try to make lemonade cookies! here’s my recipe after much trial & error. im sure everyone in the family will love them!

{lemonade cookies}

ingredients:

.5 cups of butter, softened

1 cup granulated sugar

.5 teaspoon vanilla extract

1 whole egg

2 teaspoons of lemon zest

1.5 tablespoons of lemon juice

.25 teaspoons of salt

.25 teaspoons of baking powder

.125 teaspoons baking soda {thats 1/8}

1.5 cups of all-purpose flour

.5 cups of powdered sugar

1. preheat oven to 350 & spray a light colored baking sheet with non-stick cooking spray

2. in a large bowl, cream the butter & sugar together until combined. whip in the vanilla, egg, lemon zest & juice. scrape the sides of your bowl, then mix again, slowly add all dry ingredients {except for the powdered sugar}

3. pour powdered sugar into a bowl. make heaping-teaspoon sized balls of dough & roll them in the powdered sugar.

4. place on baking sheet. {the dough doesnt expand much so dont worry about the dough being really space out, a little wiggle room will do just fine}

5. bake for nine to eleven minutes {or until the bottom of the cookies are barely brown}

6. remove from the oven & let set for about three minutes before transferring them to a baking sheet.

7. save a few for yourself in a secret place, these go fast! enjoy!
